Yes climbing can replace the strength workouts, and yes you can climb multiple days in a row since you are on a trip ( : listen to how you are feeling over all, climbing in the cold is more tiring for most in general so if feeling fairly fatigued after a few climbing days then take an extra rest day and drop aerobic work down to mellow zone one for recovery.
