    Awesome idea, Maya! That soup looks delish.

    Not sure if this is too on the nose, but I really like the Run Fast, Eat Slow line of cookbooks from Shalane Flanagan and Elyse Kopecky. This quinoa salad is one of my favorites — I often make a big batch and eat it for lunches with some sort of extra protein during the week. Apparently, Shalane ate it while training for her NY Marathon win in 2017 so I like to tell myself it gives me a speed boost for tempo workouts.

    I love anything that has chimichurri in it :-). Recently I attended a free cooking class offered by my company where we cooked this acorn and quinoa recipe which I totally love and it’s so easy to make.

    I love these ideas! I also like the Run Fast Eat Slow recipes! I feel any food that motivates you is good!! I am a big fan of Quinoa so I like both of these recipes. Thanks for sharing 🙂
