Not sure if this is too on the nose, but I really like the Run Fast, Eat Slow line of cookbooks from Shalane Flanagan and Elyse Kopecky. This quinoa salad is one of my favorites — I often make a big batch and eat it for lunches with some sort of extra protein during the week. Apparently, Shalane ate it while training for her NY Marathon win in 2017 so I like to tell myself it gives me a speed boost for tempo workouts.
